Preheat the Oven
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

Cream the Butter and Sugars
In a large mixing bowl, beat together the unsalted butter, brown sugar, and granulated sugar until creamy and well combined.

Add Eggs and Vanilla
Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until fully incorporated.

Mix Dry Ingredients
In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and cocoa powder.

Combine Wet and Dry Ingredients
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Avoid overmixing.

Fold in Chocolate and Toffee
Gently fold in the chocolate chips, local toffee bits, and cocoa nibs until evenly distributed throughout the dough.

Scoop the Cookies
Using a cookie scoop or tablespoon, drop rounded spoonfuls of dough onto the prepared baking sheets, leaving space between each cookie.

Bake in the preheated oven for 10-12 minutes, or until the edges are set and the centers look slightly underbaked.
