Prepare the Oven and Baking Sheet
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, and salt until well combined.

Cream Butter and Sugars
In a separate bowl, cream together the unsalted butter, brown sugar, and granulated sugar until the mixture is light and fluffy, about 3-4 minutes.

Add Eggs and Vanilla
Add the large eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

Combine Mixtures
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.

Fold in Mix-Ins
Gently fold in the chocolate chips, local toffee bits, and cocoa nibs until evenly distributed throughout the dough.

Scoop the Cookie Dough
Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie.

Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft.

Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
