Cook the macaroni
Bring a large pot of salted water to a boil. Add 2 cups of elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Add milk
Slowly pour in 1 cup of milk while whisking to prevent lumps. Continue to cook, stirring frequently, until the mixture thickens, about 3-5 minutes.

Add cheeses and seasonings
Remove the saucepan from heat and stir in 1 cup of pimento cheese and 1 cup of cheddar cheese until melted and smooth. Season with 1 teaspoon of salt, 0.5 teaspoon of black pepper, and 0.5 teaspoon of paprika.

Combine macaroni with cheese sauce
Add the cooked macaroni to the cheese sauce, stirring until evenly coated.

Add buffalo sauce
Stir in 0.5 cup of honey buffalo sauce until well mixed. Adjust seasoning if necessary.

Transfer the mac 'n cheese to a serving dish. Top with 0.25 cup of chopped scallions and 0.5 cup of fried crunchies for extra crunch.
