Crust

Method

Crust

  1. 1

    Prepare the Dough

In a mixing bowl, combine all-purpose flour, granulated sugar, and salt. Mix well.

  2. 2

    Add Butter

Cut the unsalted butter into small cubes and add it to the flour mixture. Use a pastry cutter or your fingers to combine until the mixture resembles coarse crumbs.

  3. 3

    Add Ice Water

Gradually add ice water, one tablespoon at a time, mixing until the dough holds together without being sticky.

  4. 4

    Chill the Dough

Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

  5. 5

    Roll Out Dough

After chilling, roll out the dough on a floured surface to fit a 9-inch pie pan.

  6. 6

    Pre-Bake the Crust

Preheat the oven to 375°F (190°C). Place the rolled out dough in the pie pan, poke holes with a fork, and bake for 15 minutes or until lightly golden.

Filling

  1. 7

    Prepare the Filling

In a mixing bowl, combine fresh berries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss gently to combine and set aside to let the berries release their juices.

  2. 8

    Assemble the Filling

Once the crust is pre-baked, pour the berry mixture into the crust, spreading evenly.

Topping

  1. 9

    Make the Whipped Cream

In a separate mixing bowl, whip the heavy cream on medium speed until it starts to thicken.

  2. 10

    Add Sugar and Vanilla

Add powdered sugar and vanilla extract, then continue to whip until soft peaks form.

  3. 11

    Serve the Pie

Once the pie has cooled, top each slice with a dollop of whipped cream before serving.
