Sear the Beef

In a large pot, heat olive oil over medium-high heat. Add the beef cubes and sear until browned on all sides. Remove the beef and set aside.

Sauté Vegetables

In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are tender. Add the minced garlic and cook for another minute.

Combine Ingredients

Return the beef to the pot. Stir in the barley, beef broth, bay leaves, and thyme. Season with salt and black pepper to taste.

Simmer the Soup

Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 1 hour, or until the beef is tender and the barley is cooked.

Final Seasoning

Taste and adjust the seasoning if needed. Remove bay leaves before serving.
