    Prepare the Rice

    In a saucepan, bring 2 cups of water to a boil. Add 1 cup of rice and a pinch of salt. Cover and reduce heat to low, cooking for about 18-20 minutes until rice is fluffy.

    Sauté the Onion and Garlic

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onion and minced garlic, and sauté until the onion is translucent.

    Add Tomato Sauce

    Pour in the tomato sauce, stir well, and let it simmer for about 5 minutes. Season with salt and black pepper.

    Fry the Fish

    In another skillet, heat the remaining 2 tablespoons of olive oil over medium-high heat. Season the fish fillets with salt and pepper. Fry the fish for about 3-4 minutes on each side until golden brown.

    Combine and Serve

    Once the fish is cooked, place it on a plate and spoon the onion and tomato sauce over the top. Serve with fluffy rice on the side, garnished with parsley.
