Add Vegetables

Pour in the fish stock or water, and bring to a boil. Reduce heat and simmer until the potatoes are tender, about 15 minutes.

Gently add the fish fillets and shrimp to the pot. Cook for about 5-7 minutes until the fish is cooked through and flakes easily.

Stir in the corn, evaporated milk, cilantro, salt, black pepper, lime juice, and aji amarillo paste. Cook for another 5 minutes to heat through.
