Prepare the Rice
In a medium pot, bring the fish stock to a boil. Add the rice, salt, and pepper. Reduce heat to low, cover, and cook for about 15-20 minutes, or until the rice is tender and the liquid is absorbed. Fluff the rice with a fork and set aside.

Cook the Seafood
In a large skillet over medium heat, add a drizzle of oil and sauté the red onion until translucent. Add the mixed seafood and cook until they turn opaque, about 5-7 minutes. Season with salt, pepper, and aji limo.

Prepare the Leche de Tigre
In a blender, combine lemon juice, cilantro, and aji limo. Blend until smooth. Strain the mixture through a fine sieve to obtain a clear liquid.

Assemble the Dish
On a plate, place a serving of rice. Top with the sautéed seafood and drizzle with leche de tigre. Serve with fried yuca or sweet potato on the side.
