Prepare the Pork
Rub the pork shoulder with Hawaiian sea salt and liquid smoke. Make sure to coat it evenly on all sides.

Wrap the Pork
Wrap the seasoned pork shoulder in banana leaves, ensuring it is completely covered. This helps to keep the meat moist during cooking.

Prepare the Underground Oven
Dig a pit in the ground that is deep enough to hold the wrapped pork and allow for hot stones. Heat stones in a separate fire until they are red hot.

Cook the Pork
Place the hot stones at the bottom of the pit. Add the wrapped pork on top of the stones, then pour 1 cup of water over the pork. Cover with more banana leaves and then cover the pit with dirt to trap the heat.

Let it Cook
Allow the pork to cook underground for about 12-16 hours, depending on the size of the pork shoulder.

Uncover and Serve
After the cooking time, carefully uncover the pit and remove the pork. Let it rest for a few minutes before shredding. Serve warm.
