Prepare the Ingredients

Cut the beef chuck roast into 1-inch cubes. Chop the carrots, potatoes, and onion. Mince the garlic.

Sear the Beef

In a large pot, heat the olive oil over medium-high heat. Add the beef cubes and season with salt and pepper. Sear the beef on all sides until browned, about 5-7 minutes. Remove the beef and set aside.

Sauté the Vegetables

In the same pot, add the onion and garlic. Sauté until the onion is translucent, about 3-4 minutes. Add the carrots and potatoes, stirring for another 2 minutes.

Combine Ingredients

Return the seared beef to the pot. Stir in the tomato paste, thyme, bay leaves, and beef broth. Bring to a boil.

Simmer the Stew

Reduce heat to low, cover, and let simmer for about 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through.

Final Seasoning

Taste the stew and adjust seasoning with additional salt and pepper if needed. Remove bay leaves before serving.
