Sear the Ribeye

In a large pot, heat olive oil over medium-high heat. Season the ribeye with salt and black pepper, then sear it on all sides until browned. Remove and set aside.

Sauté Vegetables

In the same pot, add chopped onion, carrot, celery, and garlic. Sauté until the vegetables are softened, about 5-7 minutes.

Deglaze and Simmer

Pour in the red wine to deglaze the pot, scraping up any brown bits. Add the crushed tomatoes, tomato paste, and herbs. Stir to combine.

Braise the Ribeye

Return the ribeye to the pot, cover, and simmer on low heat for 2-3 hours, or until the meat is tender and easily shredded.

Cook Spaghetti

While the meat is braising, cook spaghetti according to package instructions until al dente. Drain and set aside.

Combine and Serve

Once the ribeye is tender, shred the meat and return it to the sauce. Serve over the cooked spaghetti, topped with grated Parmesan cheese and fresh herbs.
