Steak Preparation

    Season and Sear the Steak

    Rub the striploin with olive oil, salt, and black pepper. Preheat a skillet over medium-high heat. Sear the steak for about 4-5 minutes on each side for medium-rare. Remove from heat and let rest.

Fries Preparation

    Prepare and Fry the Potatoes

    Cut the Kennebec potatoes into thick fries. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels, sprinkling with salt.

Aioli Preparation

    Make the Aioli

    In a bowl, combine mayonnaise, minced garlic, lemon juice, and salt. Mix well until smooth.

Compound Butter Preparation

    Prepare the Compound Butter

    In a bowl, mix softened butter with chopped parsley, minced garlic, and lemon zest. Form into a log and wrap in plastic wrap. Refrigerate until firm.

Assembly

    Serve the Dish

    Slice the rested steak and place on a plate alongside the crispy fries. Top the steak with a slice of compound butter and serve with aioli on the side.
