Prepare the Mussels or Clams

Clean the Shellfish
Rinse the mussels or clams under cold water, scrubbing the shells to remove any debris. Discard any that are open and do not close when tapped.

Cook the Shellfish
In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Add the cleaned mussels or clams and pour in the white wine. Cover and cook for about 5-7 minutes until the shells open. Discard any that remain closed. Sprinkle with parsley, salt, and pepper before serving.
Prepare the Fries

Fry the Potatoes
Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the Kennebec potato fries in batches until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt to taste.
Prepare the Aioli

Mix the Aioli
In a small bowl, combine the mayonnaise, minced garlic, lemon juice, and salt. Mix well until smooth and creamy. Adjust the seasoning to taste.
