Method
Prepare Fried Chicken

Marinate Chicken
In a bowl, combine buttermilk, salt, black pepper, paprika, garlic powder, and onion powder. Add chicken thighs and marinate for at least 1 hour or overnight for best results.

Coat Chicken
In a separate bowl, mix flour with salt and pepper. Remove chicken from marinade, allowing excess to drip off. Dredge each piece in the flour mixture, coating evenly.

Fry Chicken
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Fry chicken in batches until golden brown and cooked through, about 5-7 minutes per side. Drain on paper towels.

Prepare Cucumbers
Slice cucumbers into thin rounds and place them in a bowl.

Pickle Cucumbers
Pour the hot vinegar mixture over cucumbers and let sit for at least 30 minutes before serving.
Make Spicy Aioli

Mix Aioli
In a bowl, combine mayonnaise, sriracha, minced garlic, lemon juice, and salt. Mix well until smooth. Adjust seasoning to taste.
Bake Buns

Let Dough Rise
Place dough in a greased bowl, cover, and let rise in a warm place until doubled in size, about 1 hour.

Shape and Bake Buns
Preheat oven to 375°F (190°C). Divide dough into 8 pieces, shape into buns, and place on a baking sheet. Let rise for another 30 minutes. Bake for 15-20 minutes until golden.
Assemble Burger

Build the Burger
Slice buns in half. Spread spicy aioli on the bottom half, add a piece of fried chicken, top with homemade pickles, and place the top bun on. Serve immediately.
