    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into fries, ensuring they are of even thickness for uniform cooking.

    Soak the Fries

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch. This will help achieve a crispier texture.

    Preheat the Oil

    In a deep fryer or a heavy pot, heat oil to 350°F (175°C). If using a fryer, follow the manufacturer's instructions.

    Fry the Potatoes

    Drain the soaked fries and pat them dry with a clean towel. Carefully add them to the hot oil in batches, frying until golden brown and crispy, about 5-7 minutes per batch.

    Drain and Season

    Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, toss them with salt, black pepper, and truffle oil.

    Add Cheese and Serve

    Sprinkle the grated Manchego cheese over the fries while they are still warm, allowing it to melt slightly. Garnish with chopped parsley and serve immediately.
