    Prepare the Pork

    Preheat your oven to 400°F (200°C). Trim any excess fat from the pork tenderloin and cut it into 1-inch thick medallions.

    Season the Medallions

    In a bowl, mix together the olive oil, garlic powder, salt, black pepper, and rosemary. Rub this mixture all over the pork medallions.

    Wrap with Bacon

    Wrap each pork medallion with a slice of bacon, securing it with a toothpick if necessary.

    Sear the Medallions

    In a large oven-safe skillet over medium-high heat, sear the bacon-wrapped medallions for about 3-4 minutes on each side, until the bacon is crispy.

    Bake

    Transfer the skillet to the preheated oven and bake for an additional 10-12 minutes, or until the pork is cooked through and reaches an internal temperature of 145°F (63°C).

    Rest and Serve

    Remove the skillet from the oven and let the medallions rest for 5 minutes before serving. Discard toothpicks if used.
