Prepare the Vegetables
Slice the green bell pepper and onion into thin strips.

Cook the Vegetables
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced peppers and onions, season with salt and black pepper, and sauté until they are soft and caramelized, about 5-7 minutes.

Cook the Tenderloin
In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high and add the tenderloin trimmings. Cook for about 3-4 minutes, or until browned and cooked through.

Melt the Cheese
Reduce the heat to low and place the provolone cheese over the cooked tenderloin. Cover the skillet to allow the cheese to melt, about 2 minutes.

Assemble the Sandwiches
Split the hoagie buns and fill each with the cheesy tenderloin mixture and sautéed peppers and onions.

Serve the Philly cheese steaks hot, optionally with your choice of condiments.
