Method
Tuna Tartare Preparation

Prepare the Tuna
Dice the sushi-grade tuna into small cubes and place in a bowl. Add white soy sauce, sesame oil, and chopped green onions. Mix gently.

Add Avocado
Fold in the diced avocado carefully to avoid mashing.
Seaweed Salad Preparation

Soak the Seaweed
Soak the dried wakame seaweed in warm water for about 10 minutes until it expands. Drain and chop.

Mix Salad
In a bowl, combine the chopped seaweed, rice vinegar, toasted sesame seeds, and julienned cucumber. Toss well.
Nori Mayo Preparation

Make Nori Mayo
In a small bowl, mix mayonnaise with finely chopped nori sheets until well combined.
Sesame Crackers Preparation

Prepare the Crackers
In a mixing bowl, combine sesame seeds, rice flour, water, and salt. Mix until a smooth dough forms.

Bake Crackers
Roll out the dough thinly and cut into desired shapes. Bake in a preheated oven at 180°C (350°F) for about 15-20 minutes or until crispy.
Plating

Assemble the Dish
On a plate, place a scoop of tuna tartare, a side of seaweed salad, a dollop of nori mayo, and garnish with tobiko. Serve with sesame crackers on the side.
