Method

Roasted Pork Loin

    Prepare the Pork

    Preheat the oven to 375°F (190°C). Rub the pork loin with olive oil, minced garlic, salt, pepper, dried thyme, and curry powder. Place in a roasting pan.

    Roast the Pork

    Roast in the preheated oven for 60-75 minutes, or until the internal temperature reaches 145°F (63°C). Let rest for 10 minutes before slicing.

Curried Spaetzle

    Make the Dough

    In a large bowl, combine flour, eggs, milk, curry powder, and salt. Mix until a smooth batter forms.

    Cook the Spaetzle

    Bring a large pot of salted water to a boil. Use a spaetzle maker or a colander to drop the batter into the boiling water. Cook until they float to the surface, about 2-3 minutes. Remove and toss with butter.

Broccolini

    Prepare the Broccolini

    In a skillet, heat olive oil over medium heat. Add broccolini, salt, and pepper. Sauté for 4-5 minutes until tender and bright green.

Garlic Scape and Caper-Golden Raisin Puree

    Make the Puree

    In a blender, combine garlic scapes, capers, golden raisins, olive oil, and lemon juice. Blend until smooth, adding salt to taste.
