Preparation

    Prepare the potatoes

    Boil the peewee potatoes in salted water until tender, about 15 minutes. Drain and set aside.

    Caramelize the onion

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Slice the onion and add it to the skillet. Cook slowly, stirring occasionally until golden brown and caramelized, about 20 minutes.

    Sauté mushrooms and corn

    In the same skillet, add another tablespoon of olive oil. Once hot, add the chanterelle mushrooms and sauté for about 5 minutes. Then add corn kernels and cook for another 3 minutes. Set aside.

    Cook the kale

    In a separate pot, add a splash of water, bring to a simmer, and add the kale. Cook until wilted, about 5 minutes. Drain and set aside.

Cooking the steak

    Grill the skirt steak

    Season the skirt steak with salt and black pepper. Preheat a grill or grill pan over high heat. Cook the steak for about 3-4 minutes on each side for medium-rare. Let it rest for 5 minutes before slicing.

Assembly

    Plate the dish

    On a large plate, arrange the sliced skirt steak, caramelized onion, sautéed mushrooms and corn, boiled potatoes, and wilted kale. Drizzle with black truffle dashi before serving.
