Making the Croquettes

    Prepare the Mixture

    In a bowl, combine pimento cheese, flour, salt, and pepper. Mix until well combined.

    Shape the Croquettes

    Form the mixture into small balls or patties, about 1-2 inches in diameter.

    Prepare for Frying

    Set up a breading station with one bowl for beaten eggs and another for breadcrumbs.

    Bread the Croquettes

    Dip each croquette into the egg, then coat with breadcrumbs. Set aside.

    Fry the Croquettes

    Heat vegetable oil in a deep pan over medium heat. Fry croquettes until golden brown and crispy, about 3-4 minutes per side.

    Remove croquettes from oil and drain on paper towels.

Making the Smoked Tomato Aioli
