Salad Preparation

Prepare the Lettuce
Wash the gem lettuce thoroughly under cold running water. Pat dry with paper towels and cut each head in half lengthwise to create wedges.

Prepare the Tomatoes
Rinse the cherry tomatoes under water and slice them in half.

Slice the Onion
Peel the red onion and slice it thinly. Rinse under water if you prefer to reduce the sharpness.

Cook the Bacon
In a skillet over medium heat, cook the applewood smoked bacon until crispy, about 6-8 minutes. Remove and place on paper towels to drain excess fat. Once cooled, crumble into pieces.

On a large serving platter, arrange the lettuce wedges. Top with halved cherry tomatoes, thinly sliced red onions, crumbled blue cheese, and crispy bacon. Drizzle with house bleu cheese dressing.
