Prepare the Beef

In a bowl, season the ground beef with salt and black pepper. Mix gently and form into two equal balls (about 4 oz each).

Preheat the Grill or Skillet

Heat a cast-iron skillet or griddle over high heat until very hot. If you’re using a grill, ensure the grill is preheated.

Smash the Beef

Place the beef balls on the hot skillet. Using a spatula, press down firmly to flatten the patties. Cook for 2-3 minutes until a crust forms.

Flip and Add Cheese

Flip the patties and immediately place a slice of cheddar cheese on each. Cook for another 1-2 minutes until cheese melts.

Toast the Buns

While the burgers are cooking, heat butter in another pan over medium heat. Place the burger buns cut-side down and toast until golden brown.

Assemble the Burger

On the bottom half of the toasted bun, place the cooked patty with melted cheese. Add pickles, ketchup, and mustard, then top with the other half of the bun.

Prepare the Potatoes

Wash and peel the russet potatoes. Cut them into thin strips (about 1/4 inch thick) to resemble French fries.

Soak the Potatoes

Place the cut potatoes in a bowl of cold water for at least 30 minutes to remove excess starch. Drain and pat dry with paper towels.

Heat the Oil

In a deep pot or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes

Carefully add the potatoes to the hot oil in batches, avoiding overcrowding. Fry for about 5-7 minutes until golden and crispy.

Drain and Season

Using a slotted spoon, remove the fries from the oil and drain on paper towels. Sprinkle with salt and paprika to taste while still hot.
