Walleye Cakes Preparation

    Prepare the Walleye

    In a large pot, bring salted water to a boil. Add the walleye fillets and cook for about 10 minutes or until they are fully cooked and flake easily with a fork. Drain and allow to cool slightly before flaking the fish into a large bowl.

    Mix Ingredients

    To the bowl with flaked walleye, add breadcrumbs, beaten eggs, chopped green onions, garlic powder, Old Bay seasoning, salt, and pepper. Mix until well combined.

    Form Cakes

    With your hands, form the mixture into 4 equal-sized patties.

    Cook Walleye Cakes

    In a skillet over medium heat, add vegetable oil. Once hot, carefully place the patties in the skillet and cook for about 4-5 minutes on each side, or until golden brown and crispy.

Lemon Caper Aioli Preparation

    Combine Ingredients

    In a small bowl, mix together mayonnaise, lemon juice, chopped capers, minced garlic, salt, and pepper until fully combined.

Sandwich Assembly

    Prepare Buns

    Toast the brioche buns either in a toaster or on a griddle until golden brown.

    Slice Vegetables

    While the buns are toasting, slice the tomatoes and red onions.

    Assemble Sandwiches

    Spread a generous amount of lemon caper aioli on the bottom half of each toasted brioche bun. Top with a walleye cake, followed by shredded lettuce, sliced tomatoes, and red onions. Finish with the top half of the bun.
