Brussels Sprouts Preparation

Prepare Brussels Sprouts
Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut them in half lengthwise.

Cook Bacon
In a large skillet, cook the smoked bacon over medium heat until crispy. Remove the bacon from the skillet and place it on a paper towel to drain excess fat. Once cooled, crumble the bacon into small pieces.

Sauté Brussels Sprouts
In the same skillet with bacon drippings, add the prepared Brussels sprouts cut-side down. Sauté for about 5-7 minutes until they start to caramelize. Stir occasionally to ensure even cooking.

Add Bleu Cheese
Once the Brussels sprouts are tender and caramelized, sprinkle them with crumbled bleu cheese and the crumbled bacon. Cook for an additional 2-3 minutes until the cheese melts slightly.

Prepare Reduction
In a small saucepan, combine white balsamic vinegar and honey. Bring to a simmer over medium heat.

Reduce Sauce
Allow the mixture to simmer for about 10-15 minutes, stirring occasionally, until it thickens and reduces by half. Remove from heat and let cool slightly.
