Prepare the salmon

Rinse the salmon fillets under cold water and pat them dry with paper towels. Ensure the skin is scaled and bones are removed.

Season the salmon

Sprinkle salt and black pepper evenly over both sides of the salmon fillets. Drizzle with olive oil and lemon juice, then sprinkle with fresh dill (or parsley). Let the salmon marinate for about 15 minutes.

Heat the pan

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering but not smoking.

Sear the salmon

Place the salmon fillets skin-side down in the heated skillet. Sear for about 4-5 minutes, or until the skin is crispy and the fish is cooked about halfway up the sides.

Flip the salmon

Carefully flip the salmon fillets using a spatula. Cook for an additional 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork.

Serving

Remove the salmon from the skillet and let it rest for a couple of minutes. Serve with lemon wedges on the side for squeezing over the top.
