Method

Brining

    Prepare the Brine

    In a large pot, combine water, kosher salt, brown sugar, crushed garlic, black peppercorns, and bay leaves. Bring to a boil over medium heat, stirring occasionally until the salt and sugar are completely dissolved.

    Cool the Brine

    Remove the pot from heat and allow the brine to cool to room temperature. You can speed up the cooling process by adding ice.

    Brine the Chicken Wings

    Place the chicken wings in a large bowl or resealable plastic bag. Pour the cooled brine over the wings, ensuring they are fully submerged. Seal the bag tightly or cover the bowl, and refrigerate for at least 4 hours or up to overnight.

Cooking the Wings

    Preheat the Oven

    Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top.

    Prepare the Wings

    Remove the wings from the brine, pat them dry with paper towels, and place them on the wire rack. Brush them lightly with melted butter.

    Bake the Wings

    Bake the wings in the preheated oven for 40-45 minutes, or until they are golden brown and crispy. Flip the wings halfway through for even cooking.

Saucing the Wings

    Prepare Buffalo Sauce

    In a small saucepan over medium heat, melt 1 cup of butter. Once melted, remove from heat and stir in the hot sauce until well combined.

    Prepare BBQ Sauce

    In another saucepan, combine ketchup, brown sugar, smoked paprika, apple cider vinegar, and garlic powder. Cook over medium heat until the mixture is heated through and the sugar is dissolved.

    Prepare Honey Sriracha Sauce

    In a bowl, mix together honey and sriracha sauce until well combined.

    Toss Wings in Sauce

    Once the wings are done baking, remove them from the oven and toss them in your choice of sauce: Buffalo, BBQ, or Honey Sriracha. Ensure they are well coated.

    Serve the Wings

    Serve the sauced wings immediately with your favorite sides, such as celery sticks, carrot sticks, and ranch or blue cheese dressing.
