Preparation of Mussels

Clean the Mussels
Rinse the mussels under cold water, scrubbing the shells to remove any sand or debris. Remove the beards by pulling them away from the shell.

Cook the Mussels
In a large pot, combine the cleaned mussels and water. Cover and steam over medium heat for about 5-7 minutes, or until the mussels open. Discard any that do not open.
Making Scallion Herb Butter

Prepare the Herb Butter
In a small bowl, soften the unsalted butter at room temperature. Finely chop the scallions, parsley, thyme, and garlic. Mix these herbs into the butter along with lemon juice, and season with salt and pepper to taste.
Toasting the Baguette

Toast the Baguette
Preheat your oven to 400°F (200°C). Slice the baguette into 1-inch thick pieces. Brush each slice with olive oil and place them on a baking sheet. Toast in the oven for about 5-7 minutes, or until golden brown.
