Method

Preparing the Pork Loin

    Season the Pork

    Rub the Duroc pork loin with salt, black pepper, and olive oil. Ensure the loin is evenly coated.

    Smoke the Pork

    Preheat your smoker to 225°F (107°C). Place the seasoned pork loin in the smoker and smoke for about 2 hours or until the internal temperature reaches 145°F (63°C).

Making the Balsamic Mustard Glaze

    Combine Ingredients

    In a saucepan over medium heat, combine balsamic vinegar, Dijon mustard, honey, and minced garlic. Stir well to combine.

    Cook the Glaze

    Bring the mixture to a simmer and let it cook for about 10-15 minutes until it thickens slightly. Remove from heat and set aside.

Assembling the Salad

    In a large bowl, combine baby arugula, thinly sliced nectarines, and shaved parmesan cheese.
