Chicken Preparation

Prepare the Chicken
Season the chicken breasts with salt and black pepper on both sides. Heat 1 tablespoon of olive oil in a skillet over medium heat.

Cook the Chicken
Add the seasoned chicken breasts to the skillet and cook for about 6-7 minutes on each side or until they are cooked through and reach an internal temperature of 165°F (75°C). Remove from the skillet and let rest.

Cook the Bacon
In the same skillet, add the remaining tablespoon of olive oil and cook the applewood bacon until crispy. Remove and drain on paper towels.
Basil Dijonnaise Preparation

Make the Dijonnaise
In a small bowl, combine the mayonnaise, Dijon mustard, and chopped fresh basil. Mix well until fully combined. Set aside.
Assembly

Assemble the Melt
Slice the ciabatta bread in half and place the bottom half on a baking sheet. Layer each half with cooked chicken, crispy bacon, and a generous amount of Gruyère cheese.

Melt the Cheese
Place the assembled sandwiches under a broiler for 2-3 minutes or until the cheese is melted and bubbly. Keep an eye on it to prevent burning.

Add Dijonnaise and Serve
Spread the basil dijonnaise on the top half of the ciabatta, place it on the sandwich, and serve warm.
