Main Ingredients

Method

Preparation

  1. 1

    Boil the Eggs

Place the eggs in a pot and cover with cold water. Bring to a boil over medium-high heat. Once boiling, cover the pot, remove it from heat, and let it sit for 12 minutes.

  2. 2

    Cook the Bacon

While the eggs are sitting, cook the bacon in a skillet over medium heat until crispy. Remove from the skillet, drain on paper towels, and crumble into small pieces.

  3. 3

    Prepare the Jalapeños

Slice the jalapeños in half, remove seeds if desired for less heat, and finely chop them.

  4. 4

    Chop the Chives

Finely chop the chives and set aside for garnish.

Assembly

  1. 5

    Peel the Eggs

After the eggs have rested, transfer them to cold water to cool for a few minutes. Once cool, peel the eggs and slice them in half lengthwise.

  2. 6

    Make the Filling

In a mixing bowl, scoop out the yolks from the egg halves into the bowl. Add cream cheese, chopped jalapeños, crumbled bacon, salt, and black pepper. Mix until smooth and creamy.

  3. 7

    Fill the Egg Whites

Using a spoon or a piping bag, fill the egg white halves with the yolk mixture.

  4. 8

    Garnish and Serve

Sprinkle the tops with chopped chives and an extra pinch of bacon if desired. Serve immediately or refrigerate until ready to serve.
