Method

Preparing the Skirt Steak

    Marinate the Steak

    In a bowl, combine olive oil, salt, black pepper, and garlic powder. Rub this mixture over the skirt steak and let it marinate for at least 30 minutes at room temperature.

    Preheat your grill to high heat, around 450°F to 500°F (232°C to 260°C).

    Place the marinated skirt steak on the hot grill. Grill for about 3-4 minutes per side for medium-rare, or until desired doneness is reached. Remove from grill and let rest for 5 minutes before slicing.

Making the Chimichurri Sauce

    In a bowl, mix together chopped parsley, chopped cilantro, minced garlic, red wine vinegar, olive oil, red pepper flakes, and salt until well combined.

    Allow the chimichurri to sit for at least 15 minutes before serving to let the flavors meld.

Grilling the Asparagus

    Toss the trimmed asparagus with olive oil, salt, and black pepper in a bowl to coat evenly.

    Place the asparagus on the grill and cook for about 5-7 minutes, turning occasionally, until tender and slightly charred.

Making the Grilled Onion Citrus Salad

    Brush the sliced red onion with olive oil and season with salt and black pepper. Grill for about 3-4 minutes per side until softened and slightly charred.
