Salmon Preparation

    Coat the Salmon

    Pat the Atlantic salmon fillets dry with paper towels. Rub each fillet with olive oil and then coat generously with the blackening seasoning.

    Heat the Pan

    Heat a large skillet over medium-high heat. Make sure it is hot before adding the salmon to achieve a good sear.

    Cook the Salmon

    Once the skillet is hot, place the salmon fillets skin-side down in the skillet. Cook for about 4-5 minutes on each side or until the salmon is cooked through and has a nice blackened crust.

Chili Citrus Butter Preparation

    Melt the Butter

    In a small saucepan, melt the stick of unsalted butter over low heat.

    Mix in Ingredients

    Once melted, stir in the fresh lime juice, chili powder, minced garlic, and salt. Mix well until combined.

    Add Cilantro

    Remove from heat and stir in the chopped fresh cilantro. Set aside to cool slightly before using.

Garlic Green Beans Preparation

    Blanch the Green Beans

    In a pot of boiling water, blanch the fresh green beans for 2-3 minutes until bright green. Drain and set aside.

    Sauté the Green Beans

    In the same skillet used for the salmon, add olive oil and minced garlic. Sauté over medium heat for about 1 minute until fragrant.

    Finish Cooking

    Add the blanched green beans to the skillet and toss to coat in the garlic oil. Season with salt and black pepper to taste. Stir-fry for an additional 2-3 minutes until heated through.
