    Prepare Ingredients

    Dice the potatoes, red bell pepper, and onion into small cubes.

    Cook Potatoes

    In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and cook for about 10 minutes, stirring occasionally, until they are tender and golden brown.

    Add Vegetables

    Add the diced onion and red bell pepper to the skillet with the potatoes. Season with salt and black pepper. Cook for an additional 5 minutes until the vegetables are softened.

    Cook Walleye

    Add the walleye fillets to the skillet. Cook for about 5 minutes on each side or until the fish is cooked through and flakes easily with a fork.

Morel Mushroom Cream Sauce

    Rehydrate Morels

    Soak the dried morel mushrooms in warm water for about 30 minutes. Drain and chop them coarsely.

    In a saucepan, melt the butter over medium heat. Add minced garlic and cook for 1 minute until fragrant. Then add the chopped morels and thyme, cooking for another 2-3 minutes.
