Pasta Preparation
1. Cook the Pasta
In a large pot, bring water to a boil. Add 1 teaspoon of salt and the macaroni pasta. Cook according to package instructions until al dente, usually about 8-10 minutes.
2. Drain the Pasta
Once cooked, drain the pasta and set aside. Do not rinse, as you want the starch to help the cheese sauce adhere.

3. Make the Roux
In the same pot, melt 4 tablespoons of butter over medium heat. Once melted, stir in 1 tablespoon of all-purpose flour. Cook for about 1 minute, stirring constantly to form a roux.
4. Add Milk
Gradually whisk in 2 cups of milk, making sure there are no lumps. Continue to cook, stirring frequently, until the mixture thickens, about 5-7 minutes.
5. Incorporate Cheeses and Spices
Lower the heat and stir in 2 cups of shredded cheddar cheese and 4 ounces of softened cream cheese until fully melted and smooth. Add 1 teaspoon each of garlic powder, onion powder, and paprika. Season with salt and black pepper to taste.
Combine and Serve
6. Combine Pasta and Sauce
Add the drained macaroni to the cheese sauce, stirring to combine until the pasta is well coated.
7. Prepare Optional Topping
In a separate bowl, mix 1 cup of breadcrumbs, 1 cup of grated Parmesan cheese, and 2 tablespoons of melted butter until well combined. Sprinkle this mixture over the mac and cheese if desired.
8. Bake (Optional)
If using the topping, preheat your oven to 350°F (175°C) and bake for 15-20 minutes until the topping is golden brown and crispy.
9. Serve
Remove from the oven (if baked) and let cool for a few minutes before serving. Enjoy your creamy mac and cheese!
