Prepare the Hotcakes

    In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.

    In another bowl, mix the ricotta cheese, milk, eggs, lemon zest, granulated sugar, and vanilla extract until smooth and well blended.

    Pour the wet mixture into the dry ingredients. Gently fold the ingredients together until just combined. Be careful not to overmix; some lumps are okay.

    In a large skillet or griddle, melt 1 tablespoon of unsalted butter over medium heat. Allow it to slightly brown but not burn.
