Main Ingredients

Method

Preparation

  1. 1

Start by dicing the potatoes into small cubes to ensure even cooking.

  2. 2

Chop the onion and bell pepper into small pieces.

  3. 3

Dice the corned beef into small pieces.

Cooking the Hash

  1. 4

    Cook the Potatoes

In a large skillet over medium heat, melt 1 tablespoon of butter. Add the diced potatoes and season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until they are golden brown and tender.

  2. 5

    Add Vegetables

Add the chopped onion and bell pepper to the skillet with the potatoes. Sauté for another 5 minutes until the onions are translucent.

  3. 6

    Incorporate Corned Beef

Stir in the diced corned beef and cook for an additional 5-7 minutes, allowing the beef to heat through and get crispy edges.

Cooking the Eggs

  1. 7

    Fry the Eggs

In a separate pan, melt the remaining 1 tablespoon of butter over medium heat. Crack the eggs into the pan and cook to your desired doneness (sunny side up, over easy, etc.). Season with salt and pepper.

Serving

  1. 8

Serve the corned beef hash on plates, topped with the fried eggs. Toast the slices of sourdough or multigrain bread and serve on the side.
