In a large skillet over medium heat, melt 1 tablespoon of butter. Add the diced potatoes and season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until they are golden brown and tender.

Incorporate Corned Beef
Stir in the diced corned beef and cook for an additional 5-7 minutes, allowing the beef to heat through and get crispy edges.

In a separate pan, melt the remaining 1 tablespoon of butter over medium heat. Crack the eggs into the pan and cook to your desired doneness (sunny side up, over easy, etc.). Season with salt and pepper.
