Method

Preparing the Smoked Potato Chips

Slice the Potatoes

Wash and thinly slice the russet potatoes using a mandoline or a sharp knife.

Soak the Potatoes

Soak the potato slices in cold water for 30 minutes to remove excess starch.

Preheat the Smoker

Preheat your smoker to 225°F (107°C) and prepare with your choice of wood chips.

Season the Chips

Drain the potatoes and pat them dry. In a bowl, toss the slices with olive oil, smoked paprika, salt, and black pepper.

Smoke the Chips

Place the potato slices on the smoker rack. Smoke for about 1 hour, or until crispy.

Making the Blue Cheese Dip

Combine Ingredients

In a mixing bowl, combine the blue cheese, sour cream, mayonnaise, garlic powder, and lemon juice.

Mix Well

Use a fork to mash and mix the ingredients until smooth and creamy. Stir in chives if using.

Cover the dip and refrigerate for at least 30 minutes before serving to allow flavors to meld.
