Make the Custard

In a saucepan, whisk together the milk, sugar, cornstarch, and egg yolks. Cook over medium heat, stirring constantly until the mixture thickens and comes to a gentle boil. Remove from heat and stir in vanilla extract. Let it cool slightly.

Prepare the Meringue

In a clean mixing bowl, beat the egg whites until soft peaks form. Gradually add sugar and continue beating until stiff peaks form. Set aside.

Assemble the Banana Pudding

In a serving dish, layer the pecan sandies at the bottom, followed by a layer of sliced bananas, and then pour half of the custard over the bananas. Repeat the layers, finishing with the remaining custard. Top with meringue, spreading it evenly over the custard, and using a spatula to create peaks.

Bake the Meringue

Preheat your oven to 350°F (175°C). Bake the assembled pudding for 10-15 minutes, or until the meringue is golden brown. Remove from oven and let cool before serving.
