Muddle peach and mint
Place the sliced ripe peach (about 1/2 cup) and 4 of the mint leaves into a chilled mixing glass or shaker. Add 0.5 oz simple syrup and 0.5 oz fresh lemon juice. Using a sturdy muddler, gently but firmly muddle the peach and mint together 8β10 times until the peach is broken down and the mint aroma is released. Avoid over-muddling the mint to prevent bitterness.
Add bourbon and bitters
Add 2 oz Old Forester bourbon and 2 dashes of Angostura bitters to the muddled fruit and mint in the shaker.
Build and chill
Fill the shaker with cracked ice (about 1 cup). Cap the shaker and shake vigorously for 8β10 seconds to chill and slightly dilute the mixture.
Strain and serve
Double-strain the contents into a rocks glass filled with fresh cracked ice to remove peach solids and mint bits. If you prefer more texture, use a single strainer.
Garnish
Thread a fresh peach slice onto the rim or float it in the glass and finish with a fresh mint sprig. Clap the remaining 1β2 mint leaves between your hands to release aroma and tuck them into the glass for an aromatic top.
Optional adjustments
Taste and adjust: if you prefer sweeter, add up to 0.25 oz more simple syrup; for brighter acidity, add up to 0.25 oz more lemon juice. Serve immediately.
