Cake Preparation

Preheat the Oven

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.

Mix Dry Ingredients

In a large bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar until well combined.

Combine Wet Ingredients

In another bowl, beat the eggs, then add the olive oil, milk, and vanilla extract. Mix until well combined.

Combine Mixtures

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

Bake the Cake

Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

In a small bowl, combine the blueberries, diced peaches, elderflower syrup, and Eastaboga honey. Mix gently to coat the fruits in the syrup.
