Make the Pie Crust

In a mixing bowl, combine flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in ice water, one tablespoon at a time, until the dough comes together. Form into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.

Pre-bake the Crust

Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface and fit into a pie pan. Prick the bottom with a fork and bake for 15 minutes. Set aside to cool.

Prepare the Filling

In a mixing bowl, whisk together eggs, heavy cream, salt, and black pepper. Stir in the pimento cheese.

Add Tomatoes

Halve the cherry tomatoes and fold them gently into the cheese mixture.

Assemble the Pie

Pour the cheese and tomato mixture into the pre-baked crust. Bake for 25-30 minutes, or until the filling is set and the top is golden.

In a large bowl, combine frisée lettuce, olive oil, balsamic vinegar, salt, and black pepper. Toss gently to coat.
