Preparation of Chicken Thighs

Marinate the Chicken

In a mixing bowl, combine olive oil, smoked paprika, garlic powder, salt, and black pepper. Add the Joyce Farms chicken thighs and coat them evenly. Cover and let marinate for at least 30 minutes.

Prepare the Grill

Preheat your smoker or grill to 350°F (175°C). If using a smoker, add wood chips for a smoky flavor.

Make the Sauce

In a bowl, whisk together mayonnaise, white vinegar, chopped jalapeno, honey, dijon mustard, garlic powder, and salt. Adjust seasoning to taste. Refrigerate until ready to serve.

Cooking the Chicken

Smoke the Chicken

Place the marinated chicken thighs on the grill or smoker. Cook for 30-35 minutes, or until the internal temperature reaches 165°F (74°C).

Serve

Remove chicken from the grill and let it rest for a few minutes. Serve with jalapeno white BBQ sauce on the side.
