Prepare the Ingredients
Ensure that the bacon-infused bourbon is ready to use. To make bacon-infused bourbon, cook 2-3 strips of bacon until crispy, then allow the bacon to cool slightly. Combine the cooked bacon and 2 cups of Jim Beam bourbon in a jar, seal, and let it sit for 4-6 hours. Strain out the bacon before using.
Mix the Cocktail
In a cocktail shaker, combine 2 oz of bacon-infused Jim Beam bourbon, 1 oz of fresh lime juice, 1 oz of egg white, and 0.5 oz of simple syrup.
Dry Shake
Shake the mixture without ice for about 15 seconds to emulsify the egg white.
Wet Shake
Add ice to the shaker and shake again vigorously for another 15-20 seconds until well chilled.
Strain and Serve
Strain the cocktail into a chilled coupe glass.
Garnish
Garnish with a crispy bacon strip on the rim of the glass.
