    Prepare the Fries

    Cook the fries according to package instructions or prepare homemade fries by cutting potatoes into strips and frying or baking until golden and crispy.

    Season the Steak

    Pat the Piedmontese steaks dry with paper towels. Season both sides with salt and black pepper.

    Cook the Steak

    In a large skillet, heat olive oil over medium-high heat. Add the steaks and cook for about 3-4 minutes on each side for medium-rare, or until desired doneness is reached. Remove from skillet and let rest.

    Make the Chimichurri

    In a food processor, combine parsley, garlic, red wine vinegar, red pepper flakes, and a pinch of salt. Pulse until finely chopped. With the processor running, slowly drizzle in olive oil until the mixture is combined and smooth.

    Prepare the Salad

    In a bowl, combine arugula, halved cherry tomatoes, and thinly sliced red onion. Drizzle with olive oil and toss gently to combine.

    Slice the rested steaks and place on plates alongside the fries and arugula salad. Drizzle chimichurri over the steak and serve immediately.
