Pasta and Sauce
Method
Preparation
- 1
Cook the Paccheri
Bring a large pot of salted water to a boil. Add the paccheri pasta and cook according to package instructions until al dente. Drain and set aside.
- 2
Prepare the Sauce
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and Calabrian chilies, sautéing until fragrant, about 1-2 minutes.
- 3
Add Tomatoes
Add the Campari tomatoes, chopped into halves or quarters, to the skillet. Cook for about 5-7 minutes until the tomatoes start to break down and release their juices.
- 4
Combine Pasta and Sauce
Add the cooked paccheri to the skillet, tossing gently to combine with the tomato sauce. If the sauce is too thick, add a splash of pasta cooking water to reach the desired consistency.
- 5
Finish the Dish
Tear the fresh basil leaves and add them to the pasta. Season with salt and black pepper to taste. Serve hot, garnished with grated Grana Padano cheese.
