    Prepare the Base

    In a large pot, melt the butter over medium heat. Add the chopped onion, celery, and carrots. Sauté until the vegetables are softened, about 5-7 minutes.

    Add Aromatics

    Stir in the minced garlic and cook for an additional minute until fragrant.

    Cook the Potatoes

    Add the diced potatoes, chicken or seafood stock, bay leaves, thyme, salt, and pepper. Bring to a boil, then reduce heat and let simmer for about 15 minutes, or until the potatoes are tender.

    Incorporate Seafood

    Add the clams and flaked smoked mackerel to the pot. Stir in the heavy cream and let simmer for another 5-10 minutes.

    Finish and Serve

    Remove bay leaves, taste and adjust seasoning if necessary. Ladle the chowder into bowls and garnish with chopped parsley before serving.
