Prepare the Fries

Cut and Season Potatoes
Preheat your oven to 425°F (220°C). Cut the potatoes into thin strips. In a large bowl, toss the potato strips with olive oil, salt, and black pepper until evenly coated.

Bake the Fries
Spread the potato strips in a single layer on a baking sheet. Bake for 30-35 minutes, flipping halfway through, until golden and crispy.
Cook the Mussels

Sauté the Base
In a large pot, heat olive oil over medium heat. Add minced garlic and crushed red pepper flakes. Sauté for 1-2 minutes until fragrant.

Add Tomatoes and Wine
Add canned crushed tomatoes and dry white wine to the pot. Bring to a simmer and let cook for 5 minutes.

Cook the Mussels
Add the cleaned mussels to the pot. Cover and cook for 5-7 minutes, or until the mussels have opened. Discard any that do not open.

Finish with Herbs and Lemon
Stir in chopped parsley and lemon juice. Season with salt and black pepper to taste.
