Method

Preparation Steps

  1. 1

    Prepare the Cure

In a bowl, mix together the kosher salt, brown sugar, black pepper, chopped dill, lemon zest, and crushed juniper berries.

  2. 2

    Prepare the Salmon

Place the salmon fillet skin-side down in a dish. Sprinkle half of the cure mixture evenly over the flesh of the salmon. If using vodka, drizzle it over the fish.

  3. 3

    Cure the Salmon

Cover the salmon with the remaining cure mixture, ensuring it is well coated. Cover the dish with plastic wrap and place a weight (like a can) on top to press the fish down.

  4. 4

    Refrigerate

Refrigerate the salmon for 48 hours. Turn the salmon every 12 hours to ensure it cures evenly.

  5. 5

    Slice and Serve

After 48 hours, remove the salmon from the cure and rinse under cold water. Pat dry with paper towels. Slice thinly and serve with bagels, cream cheese, and capers.
