Preparing the Pickled Onion

Make the Pickling Solution
In a small saucepan, combine rice vinegar, sugar, and salt. Heat over medium heat until the sugar and salt dissolve. Allow to cool.

Cooking the Rice and Broccoli

Cook the Rice
In a medium pot, combine brown rice and water. Bring to a boil, reduce heat to low, cover, and simmer for 40-45 minutes or until water is absorbed and rice is tender.

Steam the Broccoli
During the last 10 minutes of cooking the rice, steam the broccoli florets until bright green and tender, about 5-7 minutes.
Preparing the Salmon

Cook the Salmon
Preheat a skillet over medium-high heat. Add the salmon fillets skin-side down and sear for 3-4 minutes. Flip the fillets, pour teriyaki sauce over them, and cook for an additional 3-4 minutes, until cooked through.
Assembling the Bowl

Prepare the Vegetables
Slice the bell pepper and avocado. Set aside.

Assemble the Bowl
In a bowl, layer cooked brown rice, steamed broccoli, edamame, slices of bell pepper, salmon, pickled onions, and avocado. Drizzle with additional teriyaki sauce if desired.
